Shredded chicken with a rich mix of greens and cherry tomatoes, drizzled with creamy homemade thousand island dressing. This is the taste of SPRING!
5 Leaves of iceberg lettuce
6 Leaves of endive
5 Leaves of radicchio
6 Cherry tomatoes
60g Bell peppers (red, yellow and green)
2 Pickled gherkins
100g Chicken breast
10g Olive oil
0.5g Sea salt
1g Black pepper
Step by Step Cooking Instructions:
Step 1: Cut each cherry tomato in halves, and dice the bell peppers. Drizzle with olive oil, sprinkle with salt and black pepper.
Step 2: (Optional) Bake the cherry tomatoes and bell peppers in air fryer to 180℃. Take out cherry tomatoes in 5 minutes, and bell peppers in another 5 minutes.
Step 3: Chop up the lettuce, endive, radicchio and pickled gherkins.
Step 4: Shred the chicken breast, drizzle with olive oil, sprinkle with salt and black pepper, and bake in air fryer to 180℃ for 10 minutes.
Step 5: In a bowl, mix together the salad greens, cherry tomatoes, bell peppers, shredded chicken breast, and pickles. Drizzle with olive oil, and add milk, Mayonnaise, ketchup, and Tabasco to make the dressing.
Step 6: Mix and serve as a side or add a healthy meal!
